Shaun Rankin is to open a new Ormer restaurant at the Flemings Mayfair Hotel.
The 85-cover restaurant will open on 14 September as part of a refurbishment at the hotel, and will be bringing Jersey produce to fine dining in London.
Flemings Mayfair opened in 1851, and sits near Green Park, Piccadilly and Buckingham Palace.
Besides the main restaurant, there will also be two private dining rooms.
Shaun Rankin, Executive Chef, said: "I am very proud that the Ormer name will now take pride of place in London Mayfair. The luxury Flemings Mayfair hotel is the perfect complement to my style of dining and I look forward to introducing our produce of the Channel Islands to diners in London.
"Wherever I go, I intend to take Jersey with me and forge new supply chains for our amazing artisanal producers and fisherman. Ormer Jersey will remain my flagship restaurant and I will be dividing my time between London and Jersey with the assistance of my fantastic head chefs.
