Is that sun we spy on the forecast for this weekend? Not to jinx it, but this wholesome take on a summer BBQ fave might be just right... and will only take 40 minutes of your time.
This week's Charity Chomp has been provided by Caring Cooks, who provide nutritious food to families across the island as well as hot meals and cooking education in schools.
The ingredients listed below are to serve two adults or one adult and two young children but you can simply adapt the quantities to feed more.
If you like a bit more of a bang in your burgers, you can spice them up with chilli powder and coriander.
180g of lean minced beef
Half a small onion
1/4 teaspoon of garlic purée
1/4 teaspoon of paprika
Salt & pepper
Two medium white potatoes
One corn on the cobb
A drizzle of olive oil
Prepare the burgers. Peel the onion and finely chop them. Place into the mixing bowl along with the other burger ingredients (see list) and combine.
Divide the mixture into the portions required. Roll into tight balls then flatten into a burger shape (make them a little larger as they will shrink whilst cooking). Place onto a tray, cover and refrigerate until ready to cook.
Preheat the oven to 200°c. Prepare the potato wedges. Rub with a little olive oil and place onto the baking tray. Allow 20 to 25 minutes to cook and turn halfway through.
Boil water in the saucepan and carefully place the sweetcorn in to cook. Allow to simmer for six to eight minutes. Drain then serve.
Heat the fry pan or BBQ & cook for four to five minutes on each side ensuring all the juice from the burgers run clear.
