Charity Chomp: Colourful Chicken Casserole

Why not try making Beresford Street Kitchen's chicken casserole with mashed potato and seasonal vegetables?
The charity, which helps people with learning disabilities into paid employment in its café network, described the casserole as "one of those great one-pot recipes where you can literally throw in whatever you have".
"It is nice and easy, and all our chefs have added their touch to this one!" they added.
(Serves two)
Chicken Casserole with Mashed Potato and Seasonal Vegetables
Ingredients:
- 2 chicken breasts, diced
- 1 onion, sliced
- 2 cloves garlic, crushed
- 1 small red and green pepper 1 can on tomatoes
- 1⁄2 kilo of floury potatoes such as Maris Piper
- Can of sweetcorn
- Fresh or frozen peas
- Handful of black olives Splash of white wine
- Tsp of dried mixed herbs
- 1ltr chicken stock (stock cube is fine)
- Carrot batons Butter
- Milk
- Salt and pepper Olive oil
Method:
- Heat some olive oil in a large pan and add the diced chicken. Cook for two to three minutes then remove from pan.
- Add the onions, garlic and peppers to the pan and fry over a medium heat until softened. Be careful not to burn.
- Add the chicken back to the pan, pour over the wine and let it cook off for one minute, while stirring.
- Add the tin of tomatoes, half the chicken stock, herbs, olives, salt and pepper.
- Turn down the heat to low, cover the pan and leave to simmer for one hour, check from time to time and add more stock if needed. The sauce should be reduced and thick but not dry.
- Peel and boil the potatoes in salty water and cook until soft.
- Drain and mash the potatoes with a knob of butter, a splash of milk, salt and pepper. You can choose how much milk and butter depending on how creamy you like your potatoes.
- Put the sweetcorn, peas and carrot batons in a pan of salted boiling water and boil for three to four minutes.
- To serve place a spoonful of mashed potato and vegetables on a plate.
- Ladle over the chicken casserole with plenty of sauce and serve.
