This week's recipe is courtesy of Beresford Street Kitchen, a charity which helps people with learning disabilities into paid employment in its café network.
Banana and walnut loaf
250g plain flour
130g soft brown sugar
100g softened butter
2 eggs
3 ripe bananas, mashed
3tsp baking powder
½tsp salt
½tsp ground nutmeg
50g chopped walnuts (optional)
Grease a 900g loaf tin and heat oven to 180c.
Place all the ingredients except the nuts in a big bowl and mix with an electric mixer.
Add the chopped walnuts and mix by hand.
Pour the mixture into the tin and bake for one hour, do the skewer test to check its cooked.
Leave to cool in the tin for a few minutes then turn out onto a cooling rack and leave till cold.
Slice and serve with a nice cup of tea
