In this new series, Express has challenged local mixologists with creating a new cocktail packing a punch of festive flavour.
The first comes courtesy of Samphire's Fabieene Schmalnauer.
Here, the master cocktail-maker takes a classic - an Old Fashioned - and gives it a spicy, yet comforting twist.
It's the type of treat to knock up and swirl in hand while leafing through that new book, cosy by the fire in your new Christmas socks, as the final embers of the big day fade.

Ginger syrup
Crushed ice
Bulleit bourbon
Sugar syrup
Angostura bitters
Sugared ginger
Orange zest to garnish
1. Spray an Old-Fashioned glass with ginger syrup spray.
2. Fill the glass with crushed ice, then empty it into a tall stir glass.
3. In the ice-filled stir glass, add 50ml bourbon, 15ml sugar syrup, and two dashes of Angostura Bitters.
4. Stir all the ingredients in the tall stir glass for 30 seconds.
5. Coat the rim of the Old Fashioned glass in sugar.
6. Pour all the contents of the tall glass into the Old-Fashioned glass.
7. Garnish the glass with sugared ginger pieces on the rim and a twist of orange zest.
