As the holiday season winds down, the team at The Moorings Hotel have created a vibrant cocktail to keep the Christmas spirit alive as islanders head into the New Year.

Express has partnered with the Jersey Hospitality Association for the '12 Cocktails of Christmas' series, which will showcase festive drinks from bar staff across the island, giving readers the chance to try their favourite seasonal recipes at home.

The cocktail...

Jackson from The Moorings in Gorey has shared his festive creation, 'Santa’s Hat' – a cocktail that balances bold Campari flavours with zesty lemon and a smooth, frothy finish.

The cocktail is, in Jackson’s words, “a lively start to any festive meal, sure to awaken your taste buds!"

He added that the drink is "not too alcoholic either, so you could have two (wink-wink)”.

After four years working on cruise ships, Jackson now calls Jersey home and has found his place behind the bar at The Moorings. 

His favourite drink? The Moorings’ Barrel-Aged Negroni – but this seasonal creation is perfect for those looking to mix it up.

How to make it

Ingredients:

  • 50ml Campari

  • 25ml lemon juice

  • 1 egg white

  • 15ml agave syrup

Method:

  1. Shake all the ingredients well with ice.

  2. Strain into a glass.

  3. Garnish with dehydrated orange and a sprig of rosemary
