Crispy, sweet and with a note of lemon, this might just be the perfect summer 'slaw.
This week's Charity Chomp was provided by Caring Cooks, who provide nutritious food to families across the island as well as hot meals and cooking education in schools.
The team said this "crispy coleslaw with the sweet crunch of apple and delicate tang of lemon" will be the perfect side to any summer’s day BBQ. In fact, it would go perfectly with Caring Cook's Mini Burgers.
(Serves four)
1/8 white cabbage
One small red onion
One carrot
One red apple
Juice of half a lemon
One heaped tbsp of low fat mayonnaise
Method
Using a vegetable peeler carefully shave fine ribbons of the cabbage. Place into the mixing bowl.
Peel the onion and cut in half. Finely slice then add to the cabbage.
Peel, then coarsely grate the carrot and add to the bowl.
Remove the apple core, cut into quarters then thinly slice. Combine with all the ingredients in the mixing bowl and mix using a spatula.
Finally, add the lemon juice and mayonnaise. Mix thoroughly to bind.
Place into the refrigerator until you are ready to serve.
