Lamb, onions, carrots and potatoes are all in the mix for this hotpot which promises to "never disappoint".
This week's Charity Chomp is brought to you by Jersey Action Against Rape (JAAR), which provides long term counselling and support to survivors of sexual violence.
The recipe is one of several featured in the charity's 'Recipe and Walk' book, which brings together islanders' favourite tasty treats and whimsical walks.
It was put together by Lorraine McLean who commented: "Nearly 200 years after its creation, this is a wholesome dish that never disappoints, it can be dressed up for a dinner party, or eaten as a simple midweek supper meal."
(Serves eight)
100g of butter or dripping
900g stewing lamb
3 lambs kidneys (optional)
2 medium onions chopped
4 carrots peeled and sliced
25g plain flour
2tsp of Worcestershire sauce
500ml lamb or chicken stock
2 bay leaves
900g potatoes peeled and sliced
Preheat the oven to 160C (140C Fan Oven) Gas 3.
Heat small amount of butter or dripping in large casserole dish, and then brown the lamb, and once done lift to a plate. (Include the kidneys too if you have opted to use them).
Fry onions and carrots with a little more butter or dripping until golden brown.
Sprinkle in the flour, and cook for a couple of minutes, add the Worcestershire sauce and then pour in the stock, and bring to the boil.
Stir in the lamb and kidneys and bay leaves and then remove from the heat.
Arrange the sliced potatoes on top, (ideally use a mandolin) but if you haven’t got once use a knife and place on top of meat.
Cover and then place in the oven for approx. 1.5 hours.
Once cooked remove and brush potatoes with a little butter and grill for approx. 5 – 8 mins till golden brown and enjoy.
